Caramelized Onion and Goat Cheese Pizza

2 tsp. olive oil
2 cups thinly sliced onion, separated into rings (about 1 onion)
1 Italian cheese-flavored pizza crust (such as Boboli)
1/2 cup bottled pizza sauce (such as Contadina)
1/4 cup chopped, drained, sun-dried tomato halves packed in oil
2/3 cup (3 ounces) crumbled goat cheese
1/4 cup chopped fresh basil
Preheat oven to 450 degrees. Heat olive oil in a
large nonstick skillet
over medium-high heat. Add onion; cover and cook for 3 minutes. Uncover
and cook for 11 minutes or until golden brown, stirring frequently.
Place the pizza crust on a baking sheet. Combine the sauce and
tomatoes. Spread sauce mixture over pizza crust. Top with onion and
cheese. Bake at 450 degrees for 10 minutes, or until crust is golden
brown. Sprinkle with basil. Cut into 6 wedges.
Makes 6 servings (serving size: 1 wedge).

How about an almost vegetarian pizza? Roll
out dough till thin -- 1
dough ball should make 2 large pizzas. Add a sprinkling of olive oil
(just enough to cover). Sprinkle oregano over lightly, add uncooked
sliced thin potatoes, mushrooms, green peppers and onions. If you like,
add a little ham too. Cover with low-fat mozzarella, then on the very
top sprinkle tomatoes and a few green olives (not many). Cook for about
20 minutes at 375 degrees. I think it's the best in the world!

I like to take a Papa Louie's Honey Wheat sub roll (150 calories, Fat
1.5g, Carb. 30 g). I use about two tablespoons of pizza sauce on it,
add mushrooms, bell peppers, spinach (my favorite), one slice or
shredded fat-free cheese on each side and put it in the oven until
cheese is melted. Makes a great low-fat pizza.
